Ingredients
  

  • 2 cups cucumbers thinly sliced
  • 2 cups strawberries quartered
  • 1/3 cup fresh basil or mint - chopped
  • 1/4 cup crumbled feta optional

Honey Balsamic Dressing

  • 1 tbsp extra virgin olive oil
  • 1 tbsp honey
  • 2 tsp balsamic vinegar
  • 1 tbsp lemon juice
  • 1 pinch sea salt

Instructions
 

  • In a mixing bowl, toss together cucumbers, strawberries, fresh basil or fresh mint (whichever you prefer - or both!), and crumbled feta. Set aside.
  • In a small bowl, whisk together the extra virgin olive oil, honey, lemon juice, and a pinch of sea salt until well blended.
  • Pour the honey balsamic dressing over the cucumber and strawberry mixture in the large bowl. Gently toss everything together until the salad is evenly coated with the dressing.
  • Serve immediately and enjoy!

Notes

  • For an extra burst of flavor, consider adding a handful of toasted nuts or seeds, such as almonds, walnuts, or pumpkin seeds, to the salad.
  • Use any variety of cucumber you like (English cucumber, mini cucumbers, etc).
  • Feel free to customize the salad by adding other seasonal fruits or vegetables, such as diced avocado, watermelon, or bell peppers, for additional color and texture.
  • If you're not a fan of feta cheese, you can easily omit it or substitute it with goat cheese, ricotta salata, or even crumbled blue cheese for a tangy twist.
  • To make the salad more filling, consider adding cooked grains like quinoa, farro, or couscous, or protein sources like shredded chicken.
  • Don't be afraid to experiment with different herbs in the dressing. Fresh dill, parsley, or cilantro would all add their own unique touch to the flavor profile of the salad. I'm a big advocate of using what you have on hand!
