Panera Tomato Basil Cucumber Salad
Ingredients
- 3 cups grape tomatoes halved
- 2 English Cucumbers chopped
- 1/2 cup basil chopped or chiffonade
- 1/2 tsp sea salt
- 1/4 tsp ground black pepper
Copycat Panera Greek Dressing
- 3 tbsp apple cider vinegar
- 1 tbsp white vinegar
- 4 tbsp extra virgin olive oil
- 1/2 tsp minced garlic
- 2 tsp fresh lemon juice
- 1 tsp rosemary diced (or 1/3 tsp dried rosemary)
- 2 tsp Greek seasoning
- 1/2 tsp salt
Instructions
- In a large mixing bowl, add in chopped tomatoes, chopped cucumbers, chopped basil, sea salt and black pepper. Set aside.
- In a medium mixing bowl, whisk together dressing ingredients; apple cider vinegar, white vinegar, EVOO, minced garlic, lemon juice, rosemary, greek seasoning and salt.
- Pour dressing over salad and toss gently to coat salad evenly in dressing.
- Enjoy! Store leftovers in an airtight container in the refrigerator for up to 3 days.
