How to Make Panera’s Tomato Basil Cucumber Salad

  1. Chop up your tomatoes and cucumbers.
  2. Chiffonade or chop your basil.
  3. Combine chopped veggies and basil in a bowl. Add sea salt and pepper.
  4. In a separate bowl, whisk together Greek dressing and pour over tomatoes and cucumber.

Yes! Just chop everything and keep it in an airtight container in the refrigerator until you’re reader to serve your salad. My only suggestion, however, is that you drizzle on the dressing when ready to serve so you don’t end up with any soggy tomatoes or cucumbers.

I suggest grape tomatoes, just like Panera uses in their tomato basil cucumber salad, but you could use cherry tomatoes or even a ripe Roma tomato.

No need to peel your cucumber for this salad. I do recommend cutting your cucumber lengthwise and using a spoon to scoop out the seeds.

Ingredients
  

  • 3 cups grape tomatoes halved
  • 2 English Cucumbers chopped
  • 1/2 cup basil chopped or chiffonade
  • 1/2 tsp sea salt
  • 1/4 tsp ground black pepper

Copycat Panera Greek Dressing

  • 3 tbsp apple cider vinegar
  • 1 tbsp white vinegar
  • 4 tbsp extra virgin olive oil
  • 1/2 tsp minced garlic
  • 2 tsp fresh lemon juice
  • 1 tsp rosemary diced (or 1/3 tsp dried rosemary)
  • 2 tsp Greek seasoning
  • 1/2 tsp salt

Instructions
 

  • In a large mixing bowl, add in chopped tomatoes, chopped cucumbers, chopped basil, sea salt and black pepper. Set aside.
  • In a medium mixing bowl, whisk together dressing ingredients; apple cider vinegar, white vinegar, EVOO, minced garlic, lemon juice, rosemary, greek seasoning and salt.
  • Pour dressing over salad and toss gently to coat salad evenly in dressing.
  • Enjoy! Store leftovers in an airtight container in the refrigerator for up to 3 days.
