Heat grill to medium-high heat. Slice the peaches in half and remove the pits. Brush each peach half lightly with olive oil to prevent sticking. Once the grill is hot, place the peaches cut-side down on the grates. Let them grill for about 2-3 minutes, or until they develop beautiful grill marks. Flip them over and grill for another 2-3 minutes until tender and slightly caramelized.
In a small bowl, combine the olive oil, lemon juice, minced garlic, honey, sea salt, and pepper. Give it a good whisk until everything is well incorporated. Set it aside to let the flavors mingle.
On a platter or individual serving plates, arrange the spring mix or arugula. Tear the burrata cheese into bite-sized pieces and scatter them over the greens. Tear the prosciutto and add it to the salad.
