  • Ripe Peaches
  • Lettuce (Spring Mix, Arugula, Etc)
  • Prosciutto
  • Basil
  • Burrata Cheese
  • Extra Virgin Olive Oil
  • Lemon Juice
  • Minced Garlic
  • Honey
  • Sea Salt & Black Pepper

This is one of those easy summer salads that comes together in minutes! And if I’m not up for grilling outside, I just use a grill pan inside. Grilling the peaches brings out a smoky flavor and a bit of caramelization from the sugars in the peaches. It’s delectable!

Not a fan of peaches? Try this salad with apples or a variety of berries like blackberries or blueberries instead!

Don’t have burrata? Opt for mozzarella slices!

Swap out prosciutto for another protein like sliced ham or even grilled chicken or fish.

I love this simple dressing recipe because it doesn’t compete with the flavors of the grilled peaches, burrata and prosciutto. It’s super easy.

Just whisk together EVOO, minced garlic, lemon juice, honey, salt and pepper! That’s it!

Ingredients
  

  • 3 large peaches
  • 4 ounces prosciutto
  • 8 ounces burrata cheese
  • 5 cups spring mix or arugula
  • 8-10 basil leaves

Dressing

  • 1/4 cup extra virgin olive oil
  • 2 tbsp fresh lemon juice
  • 1/2 tsp minced garlic
  • 1 tsp honey or hot honey!
  • 1/2 tsp sea salt
  • 1/2 tsp freshly ground pepper

Instructions
 

  • Heat grill to medium-high heat. Slice the peaches in half and remove the pits. Brush each peach half lightly with olive oil to prevent sticking. Once the grill is hot, place the peaches cut-side down on the grates. Let them grill for about 2-3 minutes, or until they develop beautiful grill marks. Flip them over and grill for another 2-3 minutes until tender and slightly caramelized.
  • In a small bowl, combine the olive oil, lemon juice, minced garlic, honey, sea salt, and pepper. Give it a good whisk until everything is well incorporated. Set it aside to let the flavors mingle.
  • On a platter or individual serving plates, arrange the spring mix or arugula. Tear the burrata cheese into bite-sized pieces and scatter them over the greens. Tear the prosciutto and add it to the salad.
  • Add the grilled peaches and garnish with fresh basil leaves.
  • Drizzle your dressing over the finished salad. Add additional sea salt and pepper, to taste.
  • Remember, this salad is best enjoyed fresh, so try to serve it immediately after assembly. Your taste buds will thank you for it.
