1/2small headradicchio washed and chopped (about 1-2 cups)
1/2mediumred onionthinly sliced

2sun-dried tomatoes (packed in oil)thinly sliced

Creamy Parmesan Dressing
1tbsppepperoncini brine
1tbspmayonnaise
1cloveminced garlic
1/2cupextra virgin olive oil
2tbspred wine vinegar
1tbsplemon juice
1/4cupparmesan cheesegrated
salt and pepperto taste
Instructions
In a large salad serving bowl, add in chopped romaine and radicchio. Layer on the onion, tomatoes, sun-dried tomatoes, pepperoncini peppers, chickpeas, oregano, red pepper flakes and grated parmesan cheese.
In a small mixing bowl, whisk together dressing. Drizzle over salad and serve!
