Ingredients
  

  • 2 hearts romaine lettuce washed and chopped (about 5 cups)
  • 1/2 small head radicchio washed and chopped (about 1-2 cups)
  • 1/2 medium red onion thinly sliced
  • 1 cup cherry tomatoes halved
  • 2 sun-dried tomatoes (packed in oil) thinly sliced
  • 5 pepperoncini peppers thinly sliced
  • 1 cup cooked chickpeas
  • 1 tsp oregano
  • 1/2 tsp red pepper flakes
  • 1/2 cup parmesan cheese grated

Creamy Parmesan Dressing

  • 1 tbsp pepperoncini brine
  • 1 tbsp mayonnaise
  • 1 clove minced garlic
  • 1/2 cup extra virgin olive oil
  • 2 tbsp red wine vinegar
  • 1 tbsp lemon juice
  • 1/4 cup parmesan cheese grated
  • salt and pepper to taste

Instructions
 

  • In a large salad serving bowl, add in chopped romaine and radicchio. Layer on the onion, tomatoes, sun-dried tomatoes, pepperoncini peppers, chickpeas, oregano, red pepper flakes and grated parmesan cheese.
  • In a small mixing bowl, whisk together dressing. Drizzle over salad and serve!
