Pizza Night Salad
Looking for an easy salad to serve on pizza night? This is my family’s pizza night salad that we love! The flavors of the parmesan, tomatoes and red onion really compliment pizza – and even lasagna too!
Our weekly pizza nights are my favorite! This pizza salad is the perfect crisp salad to pair with pizza. Sometimes I even make it for a quick lunch on its own, it’s loaded with flavor! Plus, you can easily customize it to your favorite flavors – similar to pizza. Here’s what I put in our pizza salad…
Pizza Night Salad Ingredients
Lettuces: You can really use any lettuce variety, but I love romaine lettuce. You could swap in iceberg too.
Radicchio: Totally optional but I love to add it in!
Tomatoes: I just use regular cherry tomatoes.
Sun-Dried Tomatoes: You can leave these out, but I love them!
Pepperoncini Peppers: These are generally mild but can have a little kick so add more or less to your taste.
Red Onion: I like mine thinly sliced but you can also dice yours. Run it under cold water if you want to take out some of the bite of the raw onion.
Chickpeas: Also called garbanzo beans, these are totally optional but I love them in this salad!
Parmesan Cheese: The star of pizza salad, lots of grated parmesan cheese!
Oregano, Salt, Pepper, Red Pepper Flakes: Season to your preferences, these are my favorites!
Pizza Salad Dressing
You could really use any of your favorite dressing with this pizza night salad – including a basic store-bought garlic vinaigrette. If I have an extra 5 minutes, I whip up this easy creamy parmesan dressing. It’s my favorite!
It’s made with a tablespoon of the brine of the pepperoncini peppers, a little mayonnaise, minced garlic, extra virgin olive oil, red wine vinegar, lemon juice and grated parmesan! Find the full recipe below.
If you aren’t serving pizza, you could make this salad a bit heartier by adding some protein like grilled chicken or even pepperoni slices for a true “pizza salad”!

Pizza Night Salad
Ingredients
- 2 hearts romaine lettuce washed and chopped (about 5 cups)
- 1/2 small head radicchio washed and chopped (about 1-2 cups)
- 1/2 medium red onion thinly sliced
- 1 cup cherry tomatoes halved
- 2 sun-dried tomatoes (packed in oil) thinly sliced
- 5 pepperoncini peppers thinly sliced
- 1 cup cooked chickpeas
- 1 tsp oregano
- 1/2 tsp red pepper flakes
- 1/2 cup parmesan cheese grated
Creamy Parmesan Dressing
- 1 tbsp pepperoncini brine
- 1 tbsp mayonnaise
- 1 clove minced garlic
- 1/2 cup extra virgin olive oil
- 2 tbsp red wine vinegar
- 1 tbsp lemon juice
- 1/4 cup parmesan cheese grated
- salt and pepper to taste
Instructions
- In a large salad serving bowl, add in chopped romaine and radicchio. Layer on the onion, tomatoes, sun-dried tomatoes, pepperoncini peppers, chickpeas, oregano, red pepper flakes and grated parmesan cheese.
- In a small mixing bowl, whisk together dressing. Drizzle over salad and serve!
