Rocket Salad with Pear and Parmesan

I’ve found myself loving super simple salads more and more lately, probably because I have two little kids and life is wild! This rocket salad with pear and parmesan is hitting the spot lately so I wanted to share my recipe so you can make it too! Enjoy!

Rocket salad – also known as arugula – is a peppery leaf that’s just delicious as a salad base. It gets the name rocket from the French word roquette. The British most commonly refer to arugula as rocket. Whatever you decide to call it, it’s delicious!

Tips for Making This Rocket Salad

I love thinly sliced pear in this salad, but you can absolutely substitute in a crisp apple or even peaches! I do think the pear pairs so well with the parmesan cheese, however, so I hope you’ll try this combination!

Similarly, swap in your favorite nuts for the walnuts. I’ve made it with almonds and pecans too, use what you already have in your kitchen. Pine nuts would be a tasty twist too. It’ll be just as delicious, I promise!

Like I said above, I love this rocket salad with shaved parmesan (grated or shredded work just as well) but you could also use blue cheese or crumbled feta!

Rocket Salad Dressing

The dress for this rocket salad is what I call my “house dressing” around my home because I make it for nearly all my salads when I’m in a pinch. It’s SO delicious, everyone loves it and it pairs well with so many flavors. Plus, it only has 4 ingredients… amazing!

  • EVOO – use a high-quality extra virgin olive oil!
  • Balsamic Vinegar
  • Honey – swap this for hot honey if you’re feeling spicy!
  • Dijon Mustard – You can use yellow mustard if you prefer.

I just love this salad both because it’s loaded with delicious flavor from the cheese and pear along with the walnuts but also because it’s insanely easy to make. That makes it perfect for busy nights when I just want a quick meal idea to pair with grilled chicken or shrimp – or enjoy on its own!

Ingredients
  

  • 4 cups rocket leaves also known as arugula
  • 1/2 large pear thinly sliced or cubed
  • 1/2 cup parmesan cheese shaved
  • 1/2 cup toasted walnuts

Rocket Salad Dressing

  • 3 tbsp extra virgin olive oil
  • 2 teaspoons balsamic vinegar
  • 1 teaspoon honey
  • 1 teaspoon Dijon mustard
  • pinch of salt and pepper to taste

Instructions
 

  • In a large salad platter, add rocket leaves, thinly sliced pear, shaved parmesan, and toasted walnuts.
  • In a small bowl, whisk together the dressing ingredients until combined.
  • Drizzle dressing over the rocket salad and toss to combine.
