This pulled pork salad is seriously delicious, my husband LOVES this one too. The sweet corn, juicy tomatoes, creamy avocado, cheese, tender pulled pork, and crispy cornbread croutons all come together for the ultimate southern chopped salad. The mix of textures and flavors is what makes this salad so irresistible – you’ll be coming back for more, guaranteed!

What You’ll Need to Make this Pulled Pork Salad

I’m a big believer in making a salad to your own favorite tastes, so use this recipe as a guide and tweak to your liking!

Pulled Pork – The star of the show! I love to use leftover BBQ restaurant pulled pork or you could make your own pulled pork however you like it! I also like to add a drizzle of barbecue sauce on mine!

Chopped Romaine Lettuce – Again, use your favorite lettuce variety, but chop it up for easy eating!

Corn – Make this salad work with you, so if you have frozen corn, use it! Canned corn? Go for it. Boiling some corn on the cob? That’s great too!

Tomatoes – I love cherry tomatoes or grape tomatoes in this salad. They’re the perfect size when quartered.

Black Beans – Give your salad a boost of protein and fiber with added black beans, be sure to rinse them well.

Shredded Cheese – I love a shredded cheddar blend, I usually use Tillamook’s thick cut cheese.

Cucumber – Use any variety you like, I love the mini cucumbers because my daughters are always snacking on them. Just chop them up into small pieces!

Avocado – I love the creamy addition of avocado! I’ve also made this pulled pork salad without it as I didn’t have an avocado ripe enough, and it was still delicious, but add it in if you have one! If taking on the go, here’s a tip for the avocado, drizzle it with lemon juice to keep it from browning!

Shredded Carrots – Crisp, crunchy and delicious! You can also slice your carrots in small rounds, but I find grabbing a bag of the shredded carrots is the easiest!

Cornbread Croutons – Just like your favorite BBQ restaurant, pulled pork should be served with some good ol’ cornbread! In this case, cornbread croutons! You can often find them in store but if not, make your own by slicing up some cornbread and toasting in the oven!

Red Onion – Red onion makes every chopped salad better in my opinion!

Dressings are personal, you know what I mean? Some people swear by all things ranch and others dream in blue cheese. You get the idea. I personally love a ranch dressing with this pulled pork along with a healthy drizzle of barbecue sauce on the pulled pork. It combines to make a dreamy barbecue ranch dressing that’s delish.

I’ve made this pulled pork salad countless times both for quick and easy weeknight dinners to use up leftover pork and also for taking on the go to potluck parties. Everyone loves it, it’s always a BIG HIT!

Ingredients
  

  • 1 head Romaine Lettuce washed and chopped
  • 12 ounces pulled pork
  • 4 tbsp barbecue sauce to drizzle on pork
  • 1 avocado chopped
  • 1 cup black beans rinsed and drained
  • 1 cup corn
  • 3/4 cup chopped cucumbers
  • 3/4 cup grape tomatoes quartered
  • 3/4 cup shredded cheddar cheese
  • 1/3 cup red onion chopped
  • 3/4 cup shredded carrots
  • 1 cup cornbread croutons
  • Ranch Dressing or dressing of choice

Instructions
 

  • Place lettuce in a large bowl.
  • Add pork, corn, black beans, tomatoes, cucumber, red onion, shredded carrots, cheese, croutons and avocado. Drizzle pulled pork with BBQ sauce.
  • Serve with ranch dressing or dressing of choice.
