1 head Romaine Lettuce washed and chopped 12 ounces pulled pork 4 tbsp barbecue sauce to drizzle on pork 1 avocado chopped 1 cup black beans rinsed and drained 1 cup corn 3/4 cup chopped cucumbers 3/4 cup grape tomatoes quartered 3/4 cup shredded cheddar cheese 1/3 cup red onion chopped 3/4 cup shredded carrots 1 cup cornbread croutons Ranch Dressing or dressing of choice
Place lettuce in a large bowl.
Add pork, corn, black beans, tomatoes, cucumber, red onion, shredded carrots, cheese, croutons and avocado. Drizzle pulled pork with BBQ sauce.
Serve with ranch dressing or dressing of choice.
