Hands-down one of my favorite salads, this Mediterranean Cucumber Salad is loaded with crisp cucumbers, juicy tomatoes, tangy feta cheese, and a zesty vinaigrette! It’s the perfect meal prep salad for a busy week!

Mediterranean Cucumber Salad Chopped

This Mediterranean Cucumber Salad recipe is a go-to salad in my house, especially in the summer months! I love to pack it up for beach or boat days with my family! It tastes great at room temperature or chilled.

It’s loaded with Mediterranean flavor from healthy ingredients and super easy to make. The crunchy cucumbers pair so well with the zesty dressing and feta! Plus you get a protein boost from the chickpeas!

Ingredient Notes

CUCUMBERS: I recommend hothouse or English cucumbers. Persian cucumbers are also a great choice! You can also use just regular cucumbers, be sure to scoop out the seeds as they will make the salad too watery.

TOMATOES: You can use any kind of tomato you like. I usually have cherry tomatoes on hand, so I cut those in half, but you can use grape tomatoes or chop up a couple of Roma tomatoes or garden tomato too.

RED ONION: Dice it finely! If it’s too potent, you can soak the diced red onion in cold water for two minutes to cut down on the bite.

OLIVES: You can use sliced Kalamata olives or black olives or leave them out if you prefer! I love the briny flavor so I like to keep them in!

CHICKPEAS: Also known as garbanzo beans, these add a boost of protein and flavor to your salad. Canned chickpeas work just fine, be sure to drain and rinse them though!

FRESH BASIL: I love the flavor of basil in this salad, but you can substitute in fresh parsley or fresh mint if you like. Or leave it out, but it’s a great addition if you have it!

EVOO: Use a high-quality extra virgin olive oil for the best flavor.

RED WINE VINEGAR: You can also swap in apple cider vinegar!

GARLIC: Don’t skip the garlic!

SEASONINGS: I like my go-to Italian seasoning, but use a Greek seasoning or whatever you like!

SALT & PEPPER: Adjust to taste!

Recipe Tips

  • This is an easy chopped salad so make your life a LOT easier and invest in a vegetable chopped like this one I use! I could not live without it in my kitchen! It makes chopped veggies a breeze.
  • If you have the time, I highly recommend making this salad in advance so you have time to refrigerate it overnight. The flavors meld together and it tastes even more delicious on the second day!
  • If you can’t find fresh basil, no worries! You could substitute in any fresh herbs you like.
  • Adjust seasonings to suit your taste!
  • The dressing is similar to a Greek dressing so if you’re in a pinch, sub in any ready-made Greek salad dressing.
  • If I have a fresh lemon or lime on hand, I will sometimes add a squeeze or a bit of zest.

Ingredients
  

  • 2 large cucumbers
  • 1 cup cherry tomatoes halved
  • 1/2 cup red onion diced
  • 1/2 cup sliced olives Kalamata olives or black olives
  • 1/2 cup crumbled feta cheese
  • 1 can chickpeas drained and rinsed
  • 2 tbsp fresh basil chopped

Mediterranean Cucumber Vinaigrette Dressing

  • 1/4 cup extra virgin olive oil
  • 3 tbsp red wine vinegar
  • 1 clove garlic minced
  • 1 tsp Italian seasoning or dried oregano
  • 1 tsp sea salt
  • 1/2 tsp black pepper

Instructions
 

  • Slice cucumbers lengthwise and scoop out seeds with a spoon. Then chop cucumbers.
  • In a large mixing bowl, combine the chopped cucumbers, cherry tomatoes, diced red onion, crumbled feta cheese, chickpeas and chopped basil. Toss well to combine.
  • In a small bowl, whisk together vinaigrette dressing ingredients (EVOO, red wine vinegar, minced garlic, seasoning, and salt and pepper) until combined.
  • Pour dressing over the chopped Mediterranean Cucumber Salad and gently toss everything together until the vegetables are evenly coated with the dressing.
  • Enjoy right away at room temperature or cover with tight plastic wrap (or place in an airtight container) and refrigerate until ready to eat. I think this salad tastes even better the next day!
