My family LOVES this sweet potato feta salad. The sweetness of the sweet potatoes pairs so well with the feta and pistachios. It’s creamy, crunchy, sweet, salty and especially perfect for the holiday season! This year I’m serving it with our Thanksgiving meal.

Tips for Making Sweet Potato Feta Salad

- Vegan Option: Skip the feta and honey (use maple syrup instead) for a plant-based version.
Ingredient Notes
LETTUCE: You can really opt for any lettuce variety. I usually have a mixed bag of artisanal greens on hand so that’s what I used. You could use romaine, arugula or spinach leaves too.
SWEET POTATOES: The star of the salad! Roasting them brings out their sweet flavor. You can change up the seasonings you add on top while roasting them or keep it simple with just some sea salt. If you want, you could swap the sweet potatoes for butternut squash.
FETA CHEESE: Creamy, tangy feta cheese pairs perfectly with the sweet potatoes. Add as much or as little as you like. Not a fan of feta? You could use blue cheese crumbles, goat cheese or skip it altogether.
PISTACHIOS: I love pistachios for that added crunch and flavor in this sweet potato salad, but you could leave them off or swap for any nut (almonds, pecans, walnuts, cashews, etc).
DRESSING: I’ve made this salad with a few different dressings, my preference is the simple lime vinaigrette I have shared in the recipe card below, but use any dressing you like! A drizzle of balsamic glaze would also be a delicious addition!

Sweet Potato Feta Salad
Ingredients
For the Salad:
- 4 cups mixed greens
- 2 medium sweet potatoes chopped
- 1/2 cup crumbled feta cheese
- 1/4 cup pistachios shelled and roughly chopped
For the Lime Vinaigrette:
- Juice of 2 limes
- 1/4 cup extra virgin olive oil
- 1 tablespoon honey
- 1 teaspoon Dijon mustard
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C). Toss the sweet potato chunks with a drizzle of olive oil, salt, and pepper. Spread on a baking sheet and roast for 20–25 minutes or until tender and slightly caramelized. Let cool.
- In a small jar, combine lime juice, olive oil, honey, Dijon mustard, salt, and pepper. Shake well.
